Currently, it is not possible to set a custom email address for Vulnerability Check notifications. They will go to the email set in the WP Admin > General > Administration Email Address.
Please feel free to make a suggestion about a custom email address on our feedback site. That way, others can vote for it, letting us know which features our users want the most.
