Can each managed site be different?

if i have, say, 300 client sites, does each site need to use the same theme and plugins and settings, or can each client site use a different theme, different plugins, and different settings, etc?

Every site can be totally different. I’m managing about 230 sites for many different customers, so they all have their own site. I didn’t even build them, so they are completely independent.
