We are finding that post categories are not being fully populated is there a workaround or fix for this as currently, the categories are only pulling A to G!?

Welcome to the MainWP Community.
We couldn’t reproduce this issue. All Post categories are shown in the dropdown menu.
Do you have a lot (hundreds or more) of categories between A and G?
Please make sure to select all relevant Child Sites above. The categories belonging to a child site will only show up in the dropdown after the site is selected.
And make sure you are running the latest versions of MainWP Dashboard (4.3.1) and the MainWP Child plugin (4.3.1).

Looking at the child sites they have over 1k categories each.
Is there a way to manually sync these into mainwp?
The categories should be synced along with the rest of the data when synchronization is performed.
Perhaps a server configuration may be a limiting factor here.
Can you please post the community system report from your MainWP Dashboard for review? The report is located in your Dashboard under Info → Server, on the top right of the page.

Thanks for the system report.
We’ve taken a look at the code and discovered that the MainWP Child plugin limits the number of categories that are synchronized to the Dashboard to 300.
You can find the modified version of the Child plugin that will send up to 10 000 post categories to the Dashboard: Dropbox - mainwp-child.zip - Simplify your life
We will have a filter in the next version of the plugin, with which you will be able to set a custom number of posts to be synchronized.
Cheers for that all post categories are now coming across. 
I just now need to workout how to change the Author in the child sites.
