I want to create an account in mainwp for my employees, and only be able to view specified domains

You can Use the Team Control Extension for that.

It seems to me that these extensions don’t split domains but still show them all to members

When editing a particular Role in Team Control, scroll down the popup window to the bottom.

There, you will see a list of sites where you can choose the ones this role should have access to:
