On the main sites list, under the ‘Last Backup’ column, all my sites show ‘Never.’ However, when I check the individual site data, I can see the last UpdraftPlus backup, so the backups are syncing but not being reflected in the list.

I am unable to reproduce this issue.
Can you check in MainWP Settings if UpdraftPlus is set as the primary backup system?
